Recipe: Gateaux Piment (Chilli Bites)

Ingredients

200g Yellow split peas
½ tsp Salt
2 shallots (chopped)
1 small onion (chopped finely)
2 tablespoons chopped coriander leaves,
2 tablespoons finely chopped spring onions,
1/2 teaspoon whole cumin seeds or powdered cumin
2 Red chillies (chopped)
¼ tsp Baking soda
¼ tsp pepper
Oil for frying.

Directions

Soak the split pea overnight.
Drain soaked split pea.
Put in a food processor and grind to a fine paste.
Add Salt, Baking Soda, all the herbs, Chillies – combine well.
Make small balls with the paste.
Heat oil in a deep frying pan.
Deep fry the Gateaux Piment – one batch at a time, until brown.
Drain them on kitchen paper towel before serving.
Better serve hot but equally tasty if you serve it cold with a dip such as Tomato sauce or Sweet Chilli sauce.
